Blog A Day June | PCOS and Dairy Free Friendly Lemon Cake

Seeing as I’ve been absent these past couple of days, I thought I would share with you a special treat recipe for a PCOS friendly Lemon Cake (one of my favourites!). It was inspired by a recipe from Sainsbury’s but with some minor tweaks to make it my own. I substituted the butter for Coconut Oil, the Polenta for ground almonds and the gluten free flour for Free From – I’ll explain later what this means. So on we go!

You will need:

  • 200g of softened coconut oil
  • 200g of Golden Caster sugar
  • 4 Large Eggs
  • 150 g of Sainsbury’s free from flour sifted

this flour is free from Gluten, Wheat, Milk and Eggs, but it is the gluten and wheat that we want to avoid.

  • 60g of Ground Almonds
  • 2 teaspoons of gluten free baking powder
  • Zest of one lemon
  • Juice of 2 lemons

Method:

Preheat the oven to 160° fan and spray a 18cm baking tin with a few sprays of frylight and line with baking paper.

Cream the butter and sugar together until smooth, similar consistency to ice cream, add the eggs and mix well. Sift the flour and baking powder into the bowl and stir until combined.

Add the ground almonds and the lemon zest and juice and mix.

Pour the mixture into the baking tin and bake for 45 minutes until golden brown and firm to the touch.

This is the first time I made this cake. We always like to have something sweet to end our Sunday Dinner and this week I just fancied something different. We served it with custard as a special treat and it was lovely. There is  syrup you can make to go inside, but that is full of sugar and the custard was just enough for us. I think if you were just going to serve it on its own, I would use the syrup, but if your serving it with cream, custard or ice cream, just cake is enough!
